If you're using plain not Greek yogurt, you can probably get by with a swap, but we do recommend diluting Greek yogurt with a little milk so it ends up more like the consistency of buttermilk.

In my family, as long as we had flour, butter, sugar and eggs on hand, we were always baking. My love of baking grew, and when other girls used their babysitting money to buy makeup, I spent my hard-earned cash on chocolate, cinnamon, and vanilla. I baked cookies and small cakes for friends and family—all with the money I earned myself.

The first step to affordable baking is to recognize where the expenses are. Initially, those expenses will be equipment-related. But while the costs of equipment can add up, you can start with just a few pieces and build your arsenal slowly as your love of baking grows.

In other words, you do not have to run out and buy that stand mixer to get started. Hand mixers are much less pricey, and they're all you need for creaming butter for cookies or making meringues and mixing cake batters.

And in fact, you can make many recipes—like muffins , bars , and cakes with melted butter or oil —right in a large mixing bowl with nothing more than a wooden spoon or spatula. You will need to purchase measuring spoons , measuring cups , a whisk , a sturdy heatproof rubber spatula or spoon, and a large mixing bowl.

Look for them—as well as professional grade mixing bowls and sheet pans—at a restaurant supply store or even yard sales and thrift stores. Almost everything you see here can be bought on sale and frozen until you need it. But not the scale. Ingredients are the other big baking expense.

Just like with equipment, I recommend you start small with a basic pantry and stock it with new items when you can. And just like with Dutch ovens and Vitamix blenders , always keep your eye out for a sale.

See a great deal on butter? Stock up and freeze it. Same goes for other premium items, such as nuts and fresh fruit. That said, it pays to know when to go for the name brands. For many basic ingredients like granulated sugar, brown sugar, confectioners' sugar, and condensed milk, store brands are great.

But when it comes to butter, chocolate, spices, and extracts? Items like nuts and chocolate are always going to be a splurge. And every now and then the splurge will be worth it.

But there are ways to stretch premium ingredients. You can make delicious brownies and cakes with cocoa powder and sprinkle just a little chocolate on top. Try it on cookies , brownies , or even on this pear tart. For more big but affordable flavor, infuse milk for pastry creams and baked puddings with fresh herbs, tea, and citrus peels.

Also, brown butter is hard to beat for adding a nutty depth of flavor to cookies, bars and cakes. The recipes you attempt will have a big impact on how much money you spend on your baking. Where should you start? With cookies. Sugar cookies have short, simple ingredient lists, are so fun to make, and the add-in options are endless: choose sprinkles, lavender, spices, citrus zests, or whatever your budget allows.

Likewise, meringue cookies made with leftover egg whites are a true gift for the thrifty baker. You can tint them with food coloring in delightful pastel colors, or embellish them with a small amount of freeze-dried fruit.

Bar cookies like blondies , lemon bars , and brownies made with cocoa! are the next stop on the Budget Baking Bus. After that: cakes, but no layers cakes with their pricey buttercream frostings and ganaches. These biscuits only require two ingredients: self-rising flour and heavy cream.

With just four ingredients, this simple bread is quick to make and easy to eat. The resulting loaf rises well, with a crunchy exterior and soft interior that makes it perfectly sliceable.

From a quick breakfast to an afternoon coffee break, scones are a versatile bake to have stashed away. A straightforward batter eggs, milk, salt, flour, and butter is poured into muffin tins ; once they hit the oven, the real magic happens.

Those eggs cause the batter to expand dramatically, yielding towering, airy puffs that are excellent with salted butter and honey. All you need to make meringues are egg whites and sugar, with a dash of salt and cream of tartar thrown in.

What you get is way more than the sum of those parts: The egg whites expand into a mass of fluffy meringue, which you can use to make dozens of mini cookies or a sheet pan full of larger versions.

You can bake your next dinner or brunch by turning to this savory puffed pancake. This recipe yields one 12" Dutch baby, so it can serve two people for a meal or four as a side dish.
